Sweet Elena's Irish Soda Bread

Ingredients:
1 pound pastry flour (I mix whole wheat pastry & white pastry flour)
2 oz sweet cold butter, cut in small cubes
1 t salt
1 t baking soda
1 T caraway seeds
1 egg
1-1/2 cups buttermilk

Directions:

  • Mix flour salt, soda, caraway seeds. Add sweet butter and work with your hands till butter is in pea size. Make a well, add buttermilk and egg. Gather dough with spatula. Might have to adjust if dough is too wet by adding bit of flour or if too dry by adding a bit of buttermilk.
  • Form a ball. Place it in a grease baking pan.
  • Make a cross by making 2 cuts on top.
  • In a preheated oven at 375, bake loaf for 10 min. then turn oven down to 350 and bake 30 - 40 minutes more; test by inserting a toothpick: when toothpick comes out clean, baking is done.
  • Let sit 10 minutes.
  • Irish soda breads are best eaten right away. If reheating, wrap it in foil.
  • Needs lots of good Irish butter! Enjoy!
  • * Sweet Elena's will be serving Irish Soda Bread from 3/10 - 3/20, 2017.
